Chocolate Fudge Cake
Calling all sweet tooth's. This Chocolate Fudge cake recipe is perfect for morning or afternoon tea, even the blokes will enjoy this one.
Ingredients For Cake:
• 9oz caster sugar
• 4oz soft margarine
• 7oz plain flour
• 1.5 tsp baking powder
• 0.5 tsp baking soda
• 1 tsp salt
• 8fl oz milk
• 2 large eggs
• 1.5 oz Cadbury Bournville Cocoa powder
• 50g plain Milk Chocolate
For the Icing:
• 8oz icing sugar
• 2.5 oz margarine
• 1 egg
• 0.25 tsp salt
• 3 tbs Cadbury Bournville Cocoa powder
Method
- Pop the oven on at gas 5, 375F or 190C.
- Ideally use a 9" diameter sprung tin with the base that is separate from the cake. Line it very roughly with a large single piece of greaseproof paper. Don't worry about the wrinkles at the sides as the icing evens it all out!
- Cream 9oz caster sugar and 4oz soft margarine, add 7oz plain flour, 1.25 tsp baking powder, 0.5 tsp baking soda, 1 tsp salt and 8fl oz milk. (I find it easiest to put the baking powder and soda in with the flour and add a spoonful of flour and a drop of milk alternately until both are used up while the mixture is moving round.
- Beat well for 2 mins.
- Add 2 eggs and 1.5oz cocoa powder, beat for 2 mins.
- Cook (approx 45 - 60 mins) until the top is springy and a skewer comes out clean from the centre of the cake.
- Leave to cool off a little then place on a plate and ice it immediately or cover in cling film to stop all moisture going.
For the Icing
- Mix up all the ingredients in one go until smooth
- Slather the icing on the top and sides of the cake, effectively sealing the cake onto the plate from the air.
- Grate Cadbury Milk Chocolate Shavings generously on top of icing.
- Cover in cling film.
Add strawberries and other red fruits on the top and serve with double cream.
